Ingredients

cut into 3-inch pieces

vegetable broth or water

whole plum tomato seeded and cut into thin wedges

fish sauce

soy sauce

kaffir lime leaf
3 leaves, thinly sliced
Instructions
Heat the oil in a wok or skillet over moderate heat.
Add the garlic and shallots and stir until aromatic, about 30 seconds. .
Add the curry paste and continue to stir to prevent sticking.
Add the long beans and sauté for 1 minute.
Add the vegetable broth and reduce heat to low.
Cook until beans are almost soft, 3 to 5 minutes.
Add the tomatoes, fish sauce, soy sauce, sugar, and lime leaves. Cook for another 2 minutes and remove from heat
