Delicious apples
unpeeled, cored, and cut into 1/2-inch cubes (about 4 cups)

Instructions
Grate the ginger. Using your hands, squeeze its juice into a small bowl. Add the mayonnaise, lemon juice, and stevia. Mix well.
In a salad bowl, combine the apples, raisins, pecans, carrot, and coconut. Add the dressing and toss well.
Cover the bowl and chill in the refrigerator for several hours before serving.
