Ingredients
  

  • 7 to 8 Delicious apples unpeeled, cored, and cut into 1/2-inch cubes (about 4 cups)
  • 1 cup raisins
  • 1 cup coarsely chopped pecans
  • 1 cup shredded carrot
  • 1/4 cup plus 2 tbsp shredded unsweetened coconut
  • 1- x-1-inch piece fresh ginger
  • 1 cup mayonnaise
  • 1/2 cup lemon juice
  • 1/8 tsp white stevia powder

Instructions 

  • Grate the ginger. Using your hands, squeeze its juice into a small bowl. Add the mayonnaise, lemon juice, and stevia. Mix well.
  • In a salad bowl, combine the apples, raisins, pecans, carrot, and coconut. Add the dressing and toss well.
  • Cover the bowl and chill in the refrigerator for several hours before serving.
