- 2 tsp olive oil
- 1 whole Garlic clove minced
- 1 cup cooked white beans such as Great Northern beans or navy beans
- 3 tbsp coarsely chopped fresh cilantro or flat-leaf parsley
- 1 dash salt to taste
- 1 dash black pepper to taste
- ½ pkg dough pizza dough
- 1 ½ cups tomato sauce
- 2 oz goat cheese cut or crumbled into 1/2-inch pieces
Heat the olive oil in a nonstick skillet. Add the garlic and cook over medium heat for 1 minute, or until fragrant but not brown. Stir in the beans, half the cilantro, and salt and pepper to taste. Cook the beans for 3 minutes or until well flavored.
Roll out the pizza dough to form an 11-inch circle and pleat the edges. Spread the tomato sauce on top. Top the pizza with the beans and goat cheese and sprinkle with the remaining cilantro.
Bake the pizza for 10 to 15 minutes, or until nicely browned. Cut into wedges and serve.
