Ingredients
  

  • 2 each yellow bell peppers large, roasted, seeded, and peeled
  • 1 ½ tablespoons shallot 1 whole shallot
  • 1 tbsp champagne
  • 1 tbsp champagne vinegar*
  • 1 tsp Dijon mustard
  • 1/4 tsp white pepper
  • 1 cup vegetable oil

Instructions 

  • In a food processor, combine the bell peppers, shallot, champagne, vinegar, mustard, and white pepper and process for 4 minutes. While processing, slowly add the oil in a steady stream and blend well. Set aside until ready to serve.
  • Champagne vinegar is available in specialty gourmet food shops.
