2each yellow bell pepperslarge, roasted, seeded, and peeled
1 ½tablespoonsshallot1 whole shallot
1tbspchampagne
1tbspchampagne vinegar*
1tspDijon mustard
1/4tspwhite pepper
1cupvegetable oil
Instructions
In a food processor, combine the bell peppers, shallot, champagne, vinegar, mustard, and white pepper and process for 4 minutes. While processing, slowly add the oil in a steady stream and blend well. Set aside until ready to serve.
Champagne vinegar is available in specialty gourmet food shops.
