Chicken, Pepper & Pineapple Kabobs

Ingredients
- 1 ½ lbs boneless chicken breast or thighs cut into 3/4-inch cubes
- 2 each bell peppers seeded and cut into 1-inch squares
- 1 each pineapple cut into 1-inch cubes
- 1 each bottle of your favorite satay sauce
Instructions
- You will need 12 - 16 bamboo skewers
- 1. Soak skewers in water while you are preparing chicken, peppers and pineapple pieces. Skewer chicken, pepper and pineapple pieces onto the skewers.
- 2. Place on a cookie sheet and brush with marinade. Set in fridge for 15 minutes.
- 3. Preheat grill. If using broiler, set oven rack about 6 inches from heat element. Grill over medium- low heat 7 - 10 minutes, turning occasionally.
- 4. Serve with warm coconut rice.
