Ingredients
  

  • 1/4 cup fresh lime juice
  • 1/4 cup finely chopped fresh cilantro or parsley
  • 2 teaspoonS ground cumin
  • 1 tsp minced garlic
  • 1 tsp minced fresh chili peppers
  • 1/2 cup olive oil
  • 2 whole avocadoes peeled and finely diced
  • 1 med ripe tomato finely diced
  • 1 dash salt to taste
  • 1 dash Black pepper freshly ground, to taste

Instructions 

  • Whisk together in a medium bowl: lime juice, cilantro, cumin, garlic, chili peppers and avocadoes.
  • Add olive oil in a slow, steady stream, whisking constantly, until smooth.
  • Stir in: Tomatoes
  • Season with salt and pepper. Taste and adjust the seasonings. Use immediately or cover and refrigerate.
