Guacamole Dressing

Ingredients
- 1/4 cup fresh lime juice
- 1/4 cup finely chopped fresh cilantro or parsley
- 2 teaspoonS ground cumin
- 1 tsp minced garlic
- 1 tsp minced fresh chili peppers
- 1/2 cup olive oil
- 2 whole avocadoes peeled and finely diced
- 1 med ripe tomato finely diced
- 1 dash salt to taste
- 1 dash Black pepper freshly ground, to taste
Instructions
- Whisk together in a medium bowl: lime juice, cilantro, cumin, garlic, chili peppers and avocadoes.
- Add olive oil in a slow, steady stream, whisking constantly, until smooth.
- Stir in: Tomatoes
- Season with salt and pepper. Taste and adjust the seasonings. Use immediately or cover and refrigerate.
