Hazelnut Chocolate Wafers

Ingredients
- 1 cup toasted hazelnuts chopped fine
- 1/2 cup sugar
- 6 tbsp butter at room temperature
- 2 egg whites
- 1/2 tsp vanilla extract
- 1/2 cup flour
- 1/2 cup high-quality bittersweet chocolate grated
Instructions
- Grind 1/2 cup of the nuts with the sugar in a food processor until the nuts are finely ground. Add the butter and pulse until the mixture is smooth. Add the egg whites and vanilla and pulse until well mixed. Add the flour and pulse until barely mixed.
- Drop the dough by spoonfuls, about 2 to 3 inches apart, onto a pair of greased cookie sheets (or sheets lined with parchment paper).
- Flatten the dough with the back of spoon and sprinkle with grated chocolate and chopped nuts.
- Bake at 350 F for 8 to 10 minutes, until edges are browned.
- Loosen cookies with a spatula while they are warm and let them cool on a rack.
