Ingredients
- 5 cups yellow corn kernels fresh or frozen
- 2-1/2 cups finely chopped onions
- 2 garlic cloves finely minced
- 3/4 cup diced red bell pepper
- 1/2 cup diced celery
- 1-1/4 cups firmly packed light brown sugar
- 1-1/2 tbsp coarse kosher salt
- 2 tbsp dry mustard
- 2 tsp mustard seed
- 1-1/2 tsp celery seed
- 2 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 2 cups cider vinegar
Instructions
- Combine all ingredients in a large, heavy, nonreactive saucepan.
- Bring the mixture to a boil, lower the heat, and simmer for approximately 30 minutes, stirring from time to time.
- Ladle into hot, sterilized 1/2-pint jars, seal, and set aside.
