Ingredients
- 1 onion peeled and chopped
- ½ cup chopped cilantro
- ½ cup chopped parsley
- 4 cloves garlic
- ½ tsp. salt
- ¼ tsp. pepper
- 3 cups water
- 2 cups quinoa
Instructions
- 1. Purée onion, cilantro, parsley, garlic, salt, pepper, and water in blender or food processor.
- 2. Transfer to a medium saucepan and bring to boil over high heat. Add quinoa, stir to combine, and reduce to heat to simmer. Cover saucepan and cook until quinoa is tender (20 minutes).
