Mom-Style Chicken Salad

Ingredients
- 3 whole chicken breast split and poached
- 1/4 cup fresh parsley sprigs packed
- 3 whole scallions cut into 1 inch pieces
- 1 whole garlic clove peeled
- 2 tablespoons white wine vinegar
- 1 tsp Worcestershire sauce
- 3/4 cup mayonnaise
- 2/3 cup sour cream
- 2 cups cooked broccoli separated into florets
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Instructions
- Remove the skin from the poached chicken breasts, and remove the meat from the bones. Cut the chicken into strips (a serrated knife works well for this).
- In a food processor or blender, mince the parsley, scallions and garlic with the vinegar and Worcestershire sauce. Add the mayonnaise and process until smooth. Turn the dressing into a small bowl and fold in the sour cream.
- Two hours before serving, combine the chicken and dressing and refrigerate. Stir in the broccoli just before you serve the salad. Season to taste with salt and pepper.
