Ingredients
  

  • 1/4 recipe Pizza Dough
  • 2 tbsp olive oil
  • 6 oz mushrooms thinly sliced
  • Salt and freshly milled pepper
  • 1/2 cup Tomato Sauce for Pizza
  • 1 to mato seeded and diced
  • 2 to 3 oz smoked mozzarella or provolone coarsely grated
  • 2 tbsp freshly grated Parmesan
  • 2 tbsp parsley chopped with 1 garlic clove
  • Red pepper flakes

Instructions 

  • Preheat the oven to 500°F.
  • Roll the dough into a 10-inch circle, set on a floured peel or pizza pan, and let rest for 10 minutes. Heat the oil in a wide skillet over high heat. Sauté the mushrooms until browned, about 5 minutes. Season well with salt and pepper.
  • Spread the tomato sauce over the dough. Add the diced tomato, then the mushrooms. Bake for 5 minutes, add the cheeses, and bake for 3 minutes more. Remove and scatter the parsley-garlic mixture and pepper flakes over the top.
