Ingredients
  

  • 3 med baking apples
  • 1 cup soy milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon pectin or heaping tablespoon agar flakes
  • 1 cup unsweetened applesauce at room temperature
  • 1/4 cup honey
  • 1 whole prebaked pie shell
  • 1 dash cinnamon to taste

Instructions 

  • If the apples have been sprayed, peel them; if they were grown organically, you may leave the peel on, but wash them well. Cut the apples in quarters, remove the core, and cut flesh in thin wedges.
  • Pour the soymilk into a heavy saucepan. Add the vanilla and the agar flakes. Stir, then add the sliced apples. Bring to a boil, stirring constantly. Cover, lower the heat, and simmer, stirring occasionally, for about 5 minutes or until the agar flakes have dissolved and the apples are just tender. Be careful not to break the apple slices while stirring. Remove the pan from the heat and gently transfer the apples to a medium bowl with a slotted spoon.
  • In another medium bowl, mix together the applesauce, honey, and the soymilk in which the apples were cooked. Pour this mixture into the baked pie crust.
  • If any apple slices have fallen apart during the cooking, push these down into the applesauce mixture. Arrange the remaining apple slices to overlap in a circle on the top of the pie, pushing them down into the applesauce mixture just enough so that they will hold together when you slice the pie. Sprinkle with cinnamon, if desired. Chill until firm.
