Cold Curried Tomato Soup with Mint

Ingredients
- 8 cups tomato juice
- 3 tbsp tomato paste
- 2 to matoes peeled, seeded, and chopped
- 8 whole Scallions including some green, minced
- 2 tsp curry powder
- 1/4 tsp ground cloves
- 1/2 tsp ground ginger
- Juice of 1 lemon
- Grated rind of 1 lemon
- 1 tsp sugar
- 1 tsp salt
- 1 cup sour cream
- chopped fresh mint
Instructions
- In a large bowl, combine all the ingredients except the salt and sour cream. Refrigerate, covered, for 3 hours or more.
- Add salt to taste. Put the sour cream in a small bowl and thin it with about 1 cup of the tomato mixture, then whisk the diluted sour cream into the tomato mixture. Serve in chilled bowls and garnish with the chopped fresh mint.
