Crab, Clam Or Oyster Cakes

Ingredients
- 2 tbsp butter
- 2 tbsp minced onion
- 2 beaten eggs
- 1/2 cup cream
- 1/2 cup soft bread crumbs
- 2 cups minced oysters canned clams or flaked crab meat--separately or combined
- 1/2 cup finely minced celery
- 1/2 tsp dry mustard or 1 tbsp lemon juice
- 2 tbsp chopped parsley
- 1/2 tsp salt
- 1/2 tsp paprika
- Flour or bread crumbs
- 1 tbsp butter
Instructions
- Melt 2 tablespoons butter.
- Add, stir and simmer 3 minutes 2 tablespoons minced onion.
- Combine and add 2 beaten eggs, 1/2 cup cream, 1/2 cup soft bread crumbs, 2 cups minced oysters, canned clams or flaked crab meat-separately or combined, 1/2 cup finely minced celery, 1/2 teaspoon dry mustard or 1 tbsp lemon juice, 2 tablespoons chopped parsley, 1/2 teaspoon salt, 1/2 teaspoon paprika.
- Chill this mixture 2 hours. Shape into cakes.
- Lightly dust with: flour or bread crumbs.
- Melt in a skillet: 1 tbsp butter.
- Quickly brown the cakes on both sides. Lower the heat and cook the cakes slowly about 6 minutes longer. Or you may deep-fat-fry the cakes, first coating with: Bound Breading À l'Anglaise.
- Let dry, then fry until golden in fat heated to 375°, about 15 minutes.
