Cremat (Flaming Coffee)

Ingredients
- 8 oz Spanish brandy warmed
- 12 oz dark rum warmed
- 3 tbsp sugar
- 1 tablespoon lemon peel thinly sliced
- 4 cups hot strong coffee
- 3 oz cinnamon sticks 3 sticks - each 5-inches
Instructions
- Combine in a flameproof 4- to 6-quart bowl: rum brandy, sugar and lemon peel
- Stir, then carefully ignite the mixture, holding a long wooden match near the surface (do not immerse the match). Stir with a long spoon while slowly adding the coffee.
- When all the coffee has been added and the flame is extinguished, ladle into cups. garnish wih cinnamon sticks
