Ingredients
  

  • 1 lb sole fillets or other similar fish
  • 1 tablespoon low-sodium soy sauce or water
  • 1 1/2 whole fresh lime or lime juice
  • 1 teaspoon apple juice concentrate or pineapple juice concentrate
  • 1 whole Garlic clove minced
  • 2 tablespoon slivered fresh ginger root
  • 2 tbsp dry sherry
  • 2 whole green onions cut in 1-inch pieces

Instructions 

  • Rinse and dry fillets. Place fish on a heatproof plate.
  • Combine soy sauce mixture, lemon juice, apple juice concentrate, garlic, gingerroot, sherry and green onions. Pour 1/2 of this mixture over fish using a brush to coat all fish surfaces. Reserve the rest for sauce.
  • Place plate on a steamer rack in a wok or large steamer in which 2 inches of water has come to a boil.
  • Steam fish until it turns from translucent to opaque, 10 to 15 minutes.
  • Serve with accumulated juice mixed with reserved sauce.
  • Serve over rice or angel hair pasta.
