Peruvian-Style Shrimp Skewers with Green Sauce
For a spicier sauce, add some jalapeno seeds to the blender to taste.

Ingredients
- 1 cup fresh cilantro leaves
- 1/2 cup mayonnaise
- 1 jalapeno pepper cored and seeded
- 1 small garlic clove peeled
- 2 Tbsp. olive oil
- 2 tsp. lime juice plus 3 limes halved crosswise
- Salt
- 1 tsp. ground cumin
- 3/4 tsp. ground coriander
- 3/4 tsp. garlic powder
- 3/4 tsp. smoked paprika
- 2 1/2 lb. extra-large tail-on peeled and deveined shrimp about 60
Instructions
- 1. Combine cilantro, mayonnaise, jalapeno, garlic, 1 tablespoon oil, lime juice, and a pinch of salt in a blender and puree until smooth; transfer to a bowl and set aside.
- 2. Heat grill to high, then clean and oil grates. In a medium bowl, stir together cumin, coriander, garlic powder, paprika, and 1/2 teaspoon salt; add shrimp and remaining 1 tablespoon oil and toss until well coated. Thread shrimp onto 12 metal or soaked wooden skewers.
- 3. Place lime halves (cut side down) and shrimp skewers on grill, close lid, and cook, turning skewers once, until shrimp are lightly charred and cooked through and lime halves are well marked, about 5 minutes total. Serve skewers with sauce and limes on the side.
