Ingredients
- 1 whole shad roe
- 2 whole beaten eggs
- 1 cup whipped cream
- 1 pinch nutmeg
Instructions
- Preheat oven to 375°.
- Poach 3 to 5 minutes: 1 fresh shad roe.
- Remove outer integument and veins. Crumble the roe and combine it with: 2 beaten eggs, 1 cup whipped cream, a grating of nutmeg, season to taste.
- Fill individual molds three-fourths full of this mixture. Set molds in a pan of hot water. Bake about 25 minutes. Serve with: Allemande Sauce or Béarnaise Sauce.
