Ingredients
  

  • 1 whole shad roe
  • 2 whole beaten eggs
  • 1 cup whipped cream
  • 1 pinch nutmeg

Instructions 

  • Preheat oven to 375°.
  • Poach 3 to 5 minutes: 1 fresh shad roe.
  • Remove outer integument and veins. Crumble the roe and combine it with: 2 beaten eggs, 1 cup whipped cream, a grating of nutmeg, season to taste.
  • Fill individual molds three-fourths full of this mixture. Set molds in a pan of hot water. Bake about 25 minutes. Serve with: Allemande Sauce or Béarnaise Sauce.
