Ingredients
- 1 lb smoked marlin thinly sliced
- 4 cups mixed salad greens torn into bite-size pieces
- 1 large avocado
- Juice of 1 lime
- 1 to mato finely chopped
- Flesh of 1 pineapple finely chopped
- 1 onion finely chopped
- 1 green sweet pepper finely chopped
- 1/2 Scotch bonnet pepper finely chopped
- 1 mango
- 1 cup white wine
- 2 large onions thinly sliced
- 2 cups vinegar
- 1/8 tsp each allspice cumin and thyme
- 1 bay leaf
- 1 tbsp sugar
Instructions
- Prepare the guacamole by pureeing the avocado and lime juice together. Add the remaining ingredients. Prepare the salsa by cooking the mango, Scotch bonnet, and wine together until soft, about 20 minutes. Prepare the pickled onion by cooking all the ingredients together over medium high heat, for about 30 minutes.
- Place a small amount of the lettuce on each of 4 dinner plates, then drape the sliced marlin over the lettuce. Garnish with all three condiments.
