Ingredients
  

  • 1 envelope unflavored gelatin
  • 1/3 cup orange juice
  • 1 pint fresh strawberries washed and hulled
  • 1/2 tsp freshly grated orange zest
  • 1/4 cup honey
  • 1 tsp vanilla
  • 2 cups light nondairy whipped topping
  • Strawberries for garnish
  • Orange zest for garnish
  • 2 tbsp Grand Marnier

Instructions 

  • Have ready eight 6-ounce dessert cups. Sprinkle the gelatin over the orange juice and allow to soften for a few minutes. Heat the gelatin in the microwave for 1 minute at full power. Stir to dissolve and set aside to cool.
  • Using a food processor, process the strawberries until well chopped. Add the orange zest, honey, and vanilla. Process until well blended, scraping down the sides of the food processor bowl as necessary. Add the gelatin mixture and process for several seconds until mixed through. Pour into a large mixing bowl.
  • Gently fold in the whipped topping. Pour half of the mixture into four individual dessert cups and garnish with strawberries. Stir 2 table, spoons of Grand Marnier into the remaining mixture. Pour into the remaining dessert cups and garnish with orange zest. Chill for several hours until set.
  • You may substitute one 8-ounce container of sliced frozen strawberries for fresh strawberries. Omit the honey.
