Vegetarian Lentil Paella

Ingredients
- 1 cup green pepper choppped
- ½ cup red onion chopped
- 4 whole Garlic cloves minced
- 2 tablespoon olive oil
- 1 cup Lentils dry
- 1 ¾ cups vegetable broth
- 1/8 teaspoon Turmeric ground
- 2 cups diced tomatoes drained
- 1 cup frozen peas thawed
- 1/3 cup pitted ripe olives
- 1/4 cup snipped cilantro or parsley
Instructions
- In a Dutch oven cook the green pepper, red onion and garlic in hot oil till onion is tender, but not brown. Rinse lentils.
- Add lentils, vegetable broth, and turmeric to the pepper mixture. Bring to a boil. Reduce heat, cover and simmer for 20 to 30 minutes or until lentils are tender and liquid is absorbed.
- Stir in tomatoes, peas, olives, and cilantro. Heat through. Season to taste before serving.
