White Fish with Summer Green Sauce

Ingredients
- 1 lb whitefish fillet such as cod flounder, haddock or halibut
- 2 tbsp olive oil
- 2 whole green onions with tops chopped
- 4 whole Garlic cloves roasted in their skin
- 1/4 cup basil leaves
- 4 sprigs parsley
- 1 cup fish stock
- 1/4 cup plain yogurt
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Sauté, grill, bake, or steam the fish fillets.
- Meanwhile, make the sauce. In a small skillet, sauté the onions in the oil for 2 to 3 minutes, then put the mixture into a blender with the roasted garlic cloves (skins removed) and the remaining ingredients. Blend until smooth, then return the purée to the skillet and heat until it has thickened slightly.
