Zesty Cod Roll-Ups

Ingredients
- 3 tablespoon Olive oil salad or cooking
- 5½ lb Pacific cod fillet
- ½ cup Pitted black olives sliced
- 2 cup Chopped tomatoes
- 1 each Fresh avocado
- 3 each Fresh scallions tops and bulb
- ½ cup Fresh cilantro leaves chopped
- 2 tablespoon Fresh lime juice
- 8 each Flour tortillas
Instructions
- 1. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Add cod and cook 4 minutes per side or until cooked through, cool. Drain well and flake fish.
- 2. In large bowl, combine flaked fish, remaining olive oil, olives, tomato, avocado, scallion, cilantro, and lime juice. Cover and refrigerate 1 hour or overnight.
- 3. Preheat oven to 350 degrees F. Create 2 stacks of 4 tortillas each. Wrap in foil and heat in oven 15 minutes.
- 4. Assemble roll-ups with warm tortilla and fish mixture.
