  • 3 lbs dried angel hair pasta
  • 1 cup olive oil
  • 2 tbsp chopped garlic
  • 1 cup grated Parmesan cheese
  • 3 tbsp umeboshi vinegar
  • 2 tbsp chopped fresh parsley or basil


  • In a large, two-gallon pot, cook the pasta in boiling water until tender but still firm. Stir occasionally to prevent sticking. Rinse and drain.
  • Place the pasta in a large mixing bowl or two separate bowls and mix in the oil, garlic, cheese, vinegar, and parsley until well combined. Serve warm or at room temperature.
