Ingredients
- 3 lbs dried angel hair pasta
- 1 cup olive oil
- 2 tbsp chopped garlic
- 1 cup grated Parmesan cheese
- 3 tbsp umeboshi vinegar
- 2 tbsp chopped fresh parsley or basil
Instructions
- In a large, two-gallon pot, cook the pasta in boiling water until tender but still firm. Stir occasionally to prevent sticking. Rinse and drain.
- Place the pasta in a large mixing bowl or two separate bowls and mix in the oil, garlic, cheese, vinegar, and parsley until well combined. Serve warm or at room temperature.
