Ingredients
- 10 to 14 tbsp butter
- 1 dash salt and pepper to taste
- 4 each cod steaks 2-inch-thick with skin on
- 1-1/2 lbs baking potatoes
- 1 whole onion thinly sliced (1/2 cup)
- 1 whole Garlic cloves finely minced
- 3 tbsp finely chopped parsley
- 3 tbsp fresh bread crumbs
Instructions
- Preheat the oven to 400°F.
- Butter a metal baking dish large enough to hold the fish and potatoes when added with 2 or 3 tablespoons of butter. Sprinkle with salt and pepper. Arrange the cod steaks in 1 layer on the bottom.
- Peel and thinly slice the potatoes, plunging the slices immediately into cold water to prevent them from discoloring. Drain the potatoes in a colander.
- Neatly scatter the potato slices around and between the pieces of fish, not on top. Scatter the onion slices over the potatoes. Season the fish and vegetables with salt and pepper. Dot everything with the remaining butter. Do not add liquid; the fish provides its own.
- Place the baking dish on top of the stove and bring to the boil. When it starts to boil, put the dish in the oven and bake uncovered 10 minutes. Baste the fish and potatoes and continue baking 10 minutes longer, basting occasionally.
- Meanwhile, combine the garlic, parsley and crumbs and sprinkle the mixture over the fish and vegetables. Bake 10 minutes longer, or until crumbs are brown.
