Banana Cake Cockaigne

Ingredients
- 2-1/4 cups cake flour
- 1/2 tsp double-acting baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter
- 1-1/2 cups sifted sugar
- 2 whole eggs
- 1 cup lightly mashed ripe bananas
- 1 teaspoon vanilla extract
- 1/4 cup yogurt or buttermilk
- 2 whole bananas sliced
- 1 cup icing
Instructions
- Preheat oven to 350°.
- Have all ingredients about 70°. Sift flour before measuring. Resift with baking powder, baking soda and salt. Set aside.
- Cream the butter and gradually add the sugar. Beat in one egg at time. Set aside.
- Combine the mashed banana, vanilla and yogurt or buttermilk. Set aside.
- Add the flour mixture to the butter mixture in 3 parts, alternating with the banana mixture. Stir the batter after each addition until smooth.
- Bake in greased pans about 30 minutes. When cool, place between the layers the sliced ripe bananas.
- Spread the cake with icing.
