Ingredients
  

  • 2-1/4 cups cake flour
  • 1/2 tsp double-acting baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1-1/2 cups sifted sugar
  • 2 whole eggs
  • 1 cup lightly mashed ripe bananas
  • 1 teaspoon vanilla extract
  • 1/4 cup yogurt or buttermilk
  • 2 whole bananas sliced
  • 1 cup icing

Instructions 

  • Preheat oven to 350°.
  • Have all ingredients about 70°. Sift flour before measuring. Resift with baking powder, baking soda and salt. Set aside.
  • Cream the butter and gradually add the sugar. Beat in one egg at time. Set aside.
  • Combine the mashed banana, vanilla and yogurt or buttermilk. Set aside.
  • Add the flour mixture to the butter mixture in 3 parts, alternating with the banana mixture. Stir the batter after each addition until smooth.
  • Bake in greased pans about 30 minutes. When cool, place between the layers the sliced ripe bananas.
  • Spread the cake with icing.
