Ingredients
- 2 cups barley flour
- 1 cup rolled oats
- 1 tbsp baking powder
- 1 egg
- 1/4 cup oil
- 1/3 cup concentrated fruit sweetener
- 1 cup soymilk
Instructions
- In a medium bowl, combine the flour, oat flakes, and baking powder. Mix well.
- In a large bowl, beat together the egg and the oil. Add the sweetener and beat again. Then slowly add the soymilk while continuing to beat.
- Add the flour mixture to the liquid mixture and beat until the batter is well mixed.
- Turn the batter into a well-oiled and floured loaf pan, 4-1/2 x 8-1/2 x 2-1/2 inches.
- Bake at 350°F for 40 minutes or until a toothpick inserted into the center of the loaf comes out clean.
