Chicken, Onion, and Apple

Ingredients
- 4 whole small boneless chicken thighs or 1 large boneless turkey thigh
- 1 pinch salt to taste
- 1 pinch pepper to taste
- 1 tbsp olive oil
- 1 whole apple cored and sliced into 1/4-inch-thick rounds
- 1 whole onion sliced into 1/4-inch-thick rounds
- 1/2 cup white wine I like Zinfandel but whatever you're drinking is okay
Instructions
- Season chicken or turkey with salt and pepper (if using turkey, cut thigh into 4 equal parts not more than 1-1/2 inches thick). Heat the oil over medium-high heat in a large frying pan and place the meat in the pan. Put a slice of apple and then a slice of onion on each piece of poultry and cover the pan. Cook for 7 to 8 minutes, until well browned (lift it a little and have a look at the underside).
- Uncover the pan (and leave uncovered from here on out) and turn the meat so the onion is on the bottom, the apple in the middle, and the poultry on top. Continue to cook for about 5 to 7 minutes (depending on the thickness of the pieces; check for firmness). Add the wine to the pan and cook until it is reduced by almost half. Flip out onto plates and serve, drizzled with or surrounded by pan juices.
