Cinnamon-Glazed Carrots

Ingredients
- 1 lb. bag carrots
- 1/2 cup water
- 1 tbsp liquid corn oil margarine
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1 tbsp honey
- 1 tsp lemon juice
- 1/4 cup chopped walnuts optional
Instructions
- Cut carrots into 3-inch strips. Place in a large skillet and add water, margarine and salt. Cover and cook until tender-crisp, about 5 to 10 minutes, adding a little more water if necessary. When carrots are tender, liquid should be nearly gone.
- Gently stir in cinnamon, honey, and lemon juice and simmer for a few minutes. Add walnuts if desired and heat 1 minute longer.
