Ingredients
  

  • 8 cups tomato juice
  • 3 tbsp tomato paste
  • 2 to matoes peeled, seeded, and chopped
  • 8 whole Scallions including some green, minced
  • 2 tsp curry powder
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • Juice of 1 lemon
  • Grated rind of 1 lemon
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup sour cream
  • chopped fresh mint

Instructions 

  • In a large bowl, combine all the ingredients except the salt and sour cream. Refrigerate, covered, for 3 hours or more.
  • Add salt to taste. Put the sour cream in a small bowl and thin it with about 1 cup of the tomato mixture, then whisk the diluted sour cream into the tomato mixture. Serve in chilled bowls and garnish with the chopped fresh mint.
