Ingredients
  

  • 1 ½ cup corn kernal
  • 1 ½ cup canned cream-style corn
  • 5 whole eggs
  • 1/4 tsp salt
  • 1/3 cup milk
  • 1 ½ cup flour
  • 1 tbsp baking powder
  • 1/3 cup sugar
  • ¼ cup confectioners sugar for dusting

Instructions 

  • Heat a deep fryer filled with vegetable oil to 325°F.
  • Combine the corns in a mixing bowl. Separate the eggs and add the yolks to the corn, mixing well.
  • In another bowl, whip the egg whites to form soft peaks. Add the salt and continue to whip until they reach the stiff peak stage.
  • Add the milk to the corn mixture; then add the flour and baking powder, and sugar, and mix them all together well. Fold in the beaten egg whites.
  • Using a small ice cream scoop, drop scoops of dough into the hot fat and fry until golden brown and cooked completely. Remove the fritters from the fat and drain on paper towels. Dust with the confectioners' sugar. Serve the fritters with maple syrup.
