Ingredients
  

  • 5 cups yellow corn kernels fresh or frozen
  • 2-1/2 cups finely chopped onions
  • 2 garlic cloves finely minced
  • 3/4 cup diced red bell pepper
  • 1/2 cup diced celery
  • 1-1/4 cups firmly packed light brown sugar
  • 1-1/2 tbsp coarse kosher salt
  • 2 tbsp dry mustard
  • 2 tsp mustard seed
  • 1-1/2 tsp celery seed
  • 2 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • 2 cups cider vinegar

Instructions 

  • Combine all ingredients in a large, heavy, nonreactive saucepan.
  • Bring the mixture to a boil, lower the heat, and simmer for approximately 30 minutes, stirring from time to time.
  • Ladle into hot, sterilized 1/2-pint jars, seal, and set aside.
