Cornmeal Pancakes

Ingredients
- Vegetable oil
- 1/2 cup freshly grated parmesan cheese
- Dash of hot pepper sauce
- 1 box hush puppy mix prepared according to package directions (or use a regular cornbread mix)
Instructions
- In a skillet over medium-high heat, heat 2 tablespoons of the vegetable oil.
- While the skillet is heating, stir the cheese and pepper sauce into the prepared hush puppy mix.
- Pour 1/4 cup of the mixture at a time into the hot skillet and cook each cornmeal pancake for 1 to 2 minutes on each side, or until golden brown. Add more oil as needed. Repeat until all the mixture is cooked. Once they are cooked, place the pancakes on a baking sheet in a warm oven, uncovered, until you're ready to serve them.
