Ingredients
  

  • 2 tbsp butter
  • 2 tbsp minced onion
  • 2 beaten eggs
  • 1/2 cup cream
  • 1/2 cup soft bread crumbs
  • 2 cups minced oysters canned clams or flaked crab meat--separately or combined
  • 1/2 cup finely minced celery
  • 1/2 tsp dry mustard or 1 tbsp lemon juice
  • 2 tbsp chopped parsley
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • Flour or bread crumbs
  • 1 tbsp butter

Instructions 

  • Melt 2 tablespoons butter.
  • Add, stir and simmer 3 minutes 2 tablespoons minced onion.
  • Combine and add 2 beaten eggs, 1/2 cup cream, 1/2 cup soft bread crumbs, 2 cups minced oysters, canned clams or flaked crab meat-separately or combined, 1/2 cup finely minced celery, 1/2 teaspoon dry mustard or 1 tbsp lemon juice, 2 tablespoons chopped parsley, 1/2 teaspoon salt, 1/2 teaspoon paprika.
  • Chill this mixture 2 hours. Shape into cakes.
  • Lightly dust with: flour or bread crumbs.
  • Melt in a skillet: 1 tbsp butter.
  • Quickly brown the cakes on both sides. Lower the heat and cook the cakes slowly about 6 minutes longer. Or you may deep-fat-fry the cakes, first coating with: Bound Breading À l'Anglaise.
  • Let dry, then fry until golden in fat heated to 375°, about 15 minutes.
