Creamed Chipped Beef with Baked Potatoes

Ingredients
- 6 oz dried chipped beef
- 4 whole baking potato
- 1 tablespoon chopped parsley
- 4 tablespoon butter
- 4 tablespoon flour
- 1 cup milk heated
- 1 teaspoon freshly ground pepper
- ½ teaspoon mustard
- ¼ teaspoon ground ginger
- ½ cup heavy cream
Instructions
- Wash and bake the potatoes.
- Cover the chipped beef with boiling water and let it stand 5 minutes. Drain, and cut into strips.
- Prepare the cream sauce - melt the butter in a saucepan over medium heat, add the flour, and cook till well blended and just pale gold. Stir in the hot milk, and when the sauce has begun to thicken add the seasonings and cream. Stir till thickened and smooth, and simmer 5 minutes.
- Add the chipped beef and keep hot over hot water. To serve, split the freshly baked potatoes and add a cube of butter to each. Transfer to serving plates. Spoon the chipped beef over the potatoes. Add another dot of butter and a little chopped parsley.
