Ingredients
  

  • 7 lbs fresh pork
  • 2 whole onions large, chopped
  • 1 whole garlic clove crushed
  • 2 tbsp salt
  • 2 tsp freshly ground pepper
  • 1 tsp crushed chili pepper
  • 1/2 tsp paprika
  • ½ teaspoon cayenne
  • 1/2 tsp allspice
  • 1/4 tsp powdered bay leaf
  • 3 sprig Fresh parsleys chopped
  • 1 lb sausage casing 5 yards

Instructions 

  • 1 Grind the pork, using the coarse knife of a meat grinder. Add the onions and garlic and regrind. Add the seasonings and mix thoroughly.
  • 2 Remove the cutting blades from the grinder and attach the sausage stuffer. Attach casing. Refeed the mixture into the grinder and through the sausage stuffer.
