Ingredients
- 1/2 cup mayonnaise
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. Dijon mustard
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 head broccoli florets broken into small pieces, stalk thinly sliced
- 1/2 lb. Brussels sprouts trimmed and shredded
- 3 cups shredded red or green cabbage
- 4 scallions sliced
- 1/2 cup roasted pepitas
Instructions
- 1. In a large bowl, whisk mayonnaise, apple cider vinegar, mustard, sugar, salt, and pepper until combined.
- 2. Add broccoli, Brussels sprouts, cabbage, scallions, and pepitas to bowl with dressing and toss until well coated.
