Food Processor Pie Pastry Dough

Ingredients
- 1-1/2 cups unbleached all-purpose flour
- 1/2 tsp salt
- 1/2 cup less 1 tbsp vegetable shortening (very cold or frozen), cut into 8 pieces
- 1 tbsp butter frozen
- 6 to 8 tbsp ice water
- 1 tsp lemon juice iced
Instructions
- Place the flour and salt in a food processor. Pulse to mix well.
- Remove the cover and arrange the shortening and butter evenly in the flour mixture. Replace the cover and pulse once or twice until the shortening and flour resemble very coarse meal.
- Remove the cover and sprinkle 6 tablespoons of the ice water and the lemon juice over the flour mixture. Replace the cover and process several seconds, just until the mixture begins to form a ball. If it appears too dry, add the remaining ice water, 1 tbsp at a time. Do not overprocess.
- Once it begins to form a ball, remove the dough from the processor and place it on a lightly floured work surface. Form it into 2 rounds, flatten slightly.
- Chill at least 1 hour.
- Roll out on a lightly floured work surface and proceed with the recipe.
