Garbanzo Salad Romaine Wraps
Wrapping hearty bean salads in lettuce is a great trick to play with if bread and wraps aren't your favorite source of whole grains but you love the convenience of a sandwich or wrap. This veggie-packed, vegan alternative to tuna salad is flavorful, nutritious, and easy.

Ingredients
- 1 15 oz. can garbanzo beans
- 1 medium tomato chopped
- ½ cup grated carrot
- ½ cup chopped celery
- 3 green onions chopped
- 2 Tbsp. vegan mayonnaise
- 1 Tbsp. mustard
- ½ tsp. salt
- ¼ tsp. black pepper
- 4 romaine lettuce leaves
Instructions
- 1. Mash beans, leaving some large pieces. Gently mix in remaining ingredients except lettuce.
- 2. Wrap salad mixture in lettuce to serve.
