Ingredients
  

  • 1 15 oz. can garbanzo beans
  • 1 medium tomato chopped
  • ½ cup grated carrot
  • ½ cup chopped celery
  • 3 green onions chopped
  • 2 Tbsp. vegan mayonnaise
  • 1 Tbsp. mustard
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 4 romaine lettuce leaves

Instructions 

  • 1. Mash beans, leaving some large pieces. Gently mix in remaining ingredients except lettuce.
  • 2. Wrap salad mixture in lettuce to serve.
