Ingredients
  

  • 2 tsp olive oil
  • 2 cups chopped onion
  • 8 whole garlic cloves minced
  • 8 cups peeled seeded, and chopped tomato
  • 1/2 cup chopped fresh parsley
  • 1/4 cup minced fresh oregano
  • 1 tsp fennel seeds crushed
  • 1/2 tsp salt
  • 1 pinch pepper to taste

Instructions 

  • Coat a large saucepan with cooking spray; add oil and place over medium heat until hot. Add onion and garlic and sauté 3 minutes or until tender. Stir in tomato and remaining ingredients; bring to a boil. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
  • Position knife blade in food processor bowl and add 3 cups of tomato mixture. Process until smooth. Add tomato pureé back to tomato mixture in saucepan; bring to a boil. Reduce heat and simmer uncovered for 15 minutes, stirring occasionally.
  • Serve over pasta, fish or chicken.
