Gingered Sole

Ingredients
- 1 lb sole fillets or other similar fish
- 1 tablespoon low-sodium soy sauce or water
- 1 1/2 whole fresh lime or lime juice
- 1 teaspoon apple juice concentrate or pineapple juice concentrate
- 1 whole Garlic clove minced
- 2 tablespoon slivered fresh ginger root
- 2 tbsp dry sherry
- 2 whole green onions cut in 1-inch pieces
Instructions
- Rinse and dry fillets. Place fish on a heatproof plate.
- Combine soy sauce mixture, lemon juice, apple juice concentrate, garlic, gingerroot, sherry and green onions. Pour 1/2 of this mixture over fish using a brush to coat all fish surfaces. Reserve the rest for sauce.
- Place plate on a steamer rack in a wok or large steamer in which 2 inches of water has come to a boil.
- Steam fish until it turns from translucent to opaque, 10 to 15 minutes.
- Serve with accumulated juice mixed with reserved sauce.
- Serve over rice or angel hair pasta.
