Ingredients

  • 1 cup yellow split peas or red lentils
  • 2 cups water
  • 1 whole small onion sliced
  • 3/4 tsp minced garlic
  • 1 teaspoon Minced fresh ginger
  • 1/2 tsp ground turmeric

  • 3/4 tsp salt
  • 2 whole serrano chilies or jalapeƱo peppers seeded and finely chopped
  • 1 whole plum tomato diced
  • 2 tbsp chopped fresh cilantro
  • 2 - 3 cups cooked rice

Instructions

  • Rinse, pick over, and place in a large saucepan the pea or lentils. Add 2 cups water, onion, garlic, finger, and turmeric. Bring to a boil, then reduce the heat and simmer, covered, until the legumes are tender, 20 to 25 minutes.

  • Stir in peppers, tomato, and cilantro.
  • Serve with cooked rice.
