Ingredients
  

  • 3/4 cup unsalted butter softened
  • 1 cup sugar
  • 1 whole egg yolk
  • 1/3 cup fresh Fresh lemon juice
  • 2 tsp grated lemon zest
  • 2 cups all-purpose flour sifted
  • 1/4 tsp salt

Instructions 

  • Preheat oven to 375° F. Combine the butter and sugar, mixing them with an electric mixer until fluffy. Add the egg yolk, lemon juice, and lemon zest, then fold in the flour and salt. Drop the dough by tablespoonfuls, spaced about 1-1/2 inches apart, onto nonstick cookie sheets. Bake for 10 minutes.
