Ingredients
  

  • 1 tablespoon Olive oil
  • 1 cup Chopped onion
  • 1 each Garlic cloves crushed
  • 2 each Tomatoes cored and quartered
  • 1 each Celery stalks sliced
  • 1 each Orange grated zest
  • 1 oz dried bay leaf
  • 16 oz Large Idaho potatoes peeled and sliced thin
  • 1 lb Flounder fillets fresh, cut into 3 inch pieces

Instructions 

  • 1. Heat oil in large soup pot over medium heat.
  • 2. Sauti the onion until soft, about 3-4 minutes. Add garlic and sauti 1 minute.
  • 3. Add tomatoes, celery, orange zest, bay leaf, pepper, and chicken broth. Cook until the vegetables are soft; remove bay leaf. Puree in blender.
  • 4. Put broth back on stove and cook the potatoes for 7 minutes. Add fish and cook until fish and potatoes are done, about 10 minutes.
