Ingredients
  

  • 1 onion peeled and chopped
  • ½ cup chopped cilantro
  • ½ cup chopped parsley
  • 4 cloves garlic
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 cups water
  • 2 cups quinoa

Instructions 

  • 1. Purée onion, cilantro, parsley, garlic, salt, pepper, and water in blender or food processor.
  • 2. Transfer to a medium saucepan and bring to boil over high heat. Add quinoa, stir to combine, and reduce to heat to simmer. Cover saucepan and cook until quinoa is tender (20 minutes).
