Ingredients
- 9 lb bluefish dressed
- 1 tsp salt
- 1 tsp pepper
- 6 oz fresh dill weed 1/2 bunch fresh dillweed chopped coarsely
- ½ bunch Fresh basil chopped, chopped coarsely
- ½ bunch Chopped fresh parsley chopped coarsely
- 2 whole carrots coarsely chopped
- 1 whole onion coarsely chopped
- 5 stalks celery chopped finely
- 1/4 cup butter melted
Instructions
- Preheat oven to 350 F. Season the bluefish inside and out with the salt and pepper. In a medium-sized bowl, mix together the herbs and vegetables.
- Stuff the fish with the vegetable mixture and place the fish upright in a large baking pan. Place any remaining vegetable mixture around the fish. Pour the wine and butter over the fish and bake for 45 minutes, or until the fish flakes easily with a fork. Serve immediately.
