Ingredients
  

  • 1 cup oat bran
  • 1 cup rolled oats
  • 1/3 cup firmly packed brown sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 egg beaten with a fork
  • 1/4 cup safflower oil
  • 1 cup skim milk
  • 1/2 cup raisins
  • 1/3 cup chopped walnuts
  • 1/4 cup brown sugar
  • 1 tbsp flour
  • 1 tsp cinnamon
  • 1 tbsp safflower oil

Instructions 

  • In a large bowl, combine the first six ingredients and mix well.
  • In a small bowl, mix together the egg, oil, and milk.
  • Add the wet ingredients to the dry ingredients and stir until combined. Stir in the raisins and walnuts.
  • Pour batter into a round or square baking pan that has been lightly oiled or nonstick-sprayed. Combine topping ingredients, and sprinkle it on top of the cake.
  • Bake at 400° for 20 to 25 minutes.
