Oatmeal-Oat Bran Coffee Cake

Ingredients
- 1 cup oat bran
- 1 cup rolled oats
- 1/3 cup firmly packed brown sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 egg beaten with a fork
- 1/4 cup safflower oil
- 1 cup skim milk
- 1/2 cup raisins
- 1/3 cup chopped walnuts
- 1/4 cup brown sugar
- 1 tbsp flour
- 1 tsp cinnamon
- 1 tbsp safflower oil
Instructions
- In a large bowl, combine the first six ingredients and mix well.
- In a small bowl, mix together the egg, oil, and milk.
- Add the wet ingredients to the dry ingredients and stir until combined. Stir in the raisins and walnuts.
- Pour batter into a round or square baking pan that has been lightly oiled or nonstick-sprayed. Combine topping ingredients, and sprinkle it on top of the cake.
- Bake at 400° for 20 to 25 minutes.
