Old-World Buttermilk Waffles

Ingredients
- 2 cups whole-grain spelt flour
- 2 tsp nonaluminum baking powder
- 1 dash sea salt
- 1/2 cup melted canola margarine
- ΒΌ cup turbinado sugar or other sweetner
- 3 whole eggs separated
- 2 cups low-fat buttermilk
Instructions
- Place the flour, baking powder, and salt in a 3-quart bowl, and sift together. Set aside.
- Place the margarine, sugar, and egg yolks in a 2-quart bowl, and blend with a wire whisk or fork. Add the buttermilk, and continue to blend until the ingredients are thoroughly combined.
- Pour the liquid mixture into the dry mixture, and mix with a whisk only until the batter is smooth.
- Beat the egg whites until they are stiff. Spread the whites over the batter, and gently fold them into the batter.
- Following the manufacturer's instructions, lightly grease your waffle iron. Pour an appropriate amount of batter into the iron, and bake at a moderately hot setting until the iron has stopped steaming and the waffle is crisp and light- to medium-brown. Keep the cooked waffles warm in the oven until all the waffles are done.
- Serve hot with the topping of your choice.
