Ingredients
- 6 cups of water
- 1-1/2 lbs ground chuck or ground round
- 1 large potato peeled, quartered
- 1 ripe plantain sliced in 1/4-inch slices
- 2 tbsp vegetable oil
- 2 garlic cloves crushed
- 4 oz sliced pepperoni or chorizo sausage for a more traditional flavor
- 1 6- ounce can chickpeas
- 1/4 lb green beans
- 1/2 head small cabbage chopped
- 1 bunch scallions
- 1 small onion quartered
- 1/4 tsp salt
- 8 peppercorns
Instructions
- In a large saucepan combine the water and the ground beef. Boil the beef until tender. Remove from the broth and set aside. Add the potato to the broth and boil until cooked but not soft, about 5 to 7 minutes. Remove from the broth and set aside. Add the plantain to the broth and boil until cooked but not soft, about 2 to 3 minutes. Set aside.
- Heat the vegetable oil in a large frying pan over medium heat. Add the garlic and brown. Add the beef, pepperoni (or chorizo), chickpeas, green beans, cabbage, and scallions. Pour in the meat broth and mix together well. Add the onion, salt, and peppercorns and allow to simmer until the vegetables are soft and cooked. Serve with rice.
