Ingredients
  

  • 1-1/2 cups yellow cornmeal
  • 1/2 cup bread or all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp baking powder
  • 1 cup milk
  • 3 whole eggs room temperature
  • 1/4 cup heavy cream room temperature
  • ¼ cup Butter melted

Instructions 

  • Grease a shallow 16"-x-12" baking pan, or a combination of smaller pans with the equivalent volume (two 9"-x-9" pans are about right)
  • Preheat the oven to 400°.
  • In a mixing bowl measure the cornmeal, flour, salt, sugar, and baking powder.
  • In a small bowl lightly beat the milk into the eggs and pour this into the bowl of dry ingredients. Beat until thoroughly blended. Pour in the cream and butter. Blend the mixture.
  • Pour the batter into the baking pans to a depth of about 1/2".
  • Bake 20 to 25 minutes.
  • Bake in the oven until the bread is nicely browned and tests done when a wood toothpick inserted in the center comes out clean and dry, 20 to 25 minutes.
  • Remove the bread from the oven. Serve hot, cut into rectangles.
